Blackberry & Burrata Crostini
Ingredients
- 1 baguette loaf - sliced diagonally
- 3 tbsp extra virgin olive oil
- 1 pint blackberries - about 12 ounces
- 8 ounces burrata cheese
- 1/4 cup hot honey
- 1/3 cup micro-greens - or fresh herbs (basil, parsley)
- sea salt - to taste
Instructions
- Preheat oven to 375° degrees F.
- Slice baguette into 1/4″ slices and arrange the bread slices on a baking sheet. It should make about 30 slices, depending on the size of the baguette. Lightly brush both sides with olive oil.
- Bake until lightly golden, approximately 5-7 minutes.
- Allow crostini to cool to touch.
- Spread a layer of burrata cheese on each crostini.
- Top with fresh blackberries, chopped or whole (or a mix!).
- Next, top with flaky salt and micro-greens or herbs.
- Drizzle with hot honey. Enjoy!

Ingredients
- 12 apricots, seeded and cut into halves
- 1 cup ricotta cheese
- 2 Tbsp honey
- Fresh basil, finely chopped
- Sea salt
- Balsamic Glaze
Instructions
- Place the 24 apricot halves on a tray.
- In a small bowl, mix the ricotta and honey.
- Fill each apricot half with a dollop (about 2 Tbsp.) of ricotta mixture.
- Sprinkle with sea salt.
- Drizzle the bites with balsamic glaze. Sprinkle with finely chopped basil. Refrigerate if needed.
- Best if served at room temperature.

Peach, Prosciutto & Burrata Salad
Ingredients
- 2 large ripe peaches
- 8 ounce ball burrata cheese
- 2-3 slices proscuitto
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked sea salt
- 1/2 teaspoon freshly cracked black pepper
- fresh basil leaves to serve
Instructions
- Slice peaches into 1/2 -inch thick wedges and arrange on a large plate or platter.
- Carefully tear into the burrata and arrange pieces of equally on top of the peaches. Do the same with the prosciutto then drizzle the salad with olive oil. Sprinkle with thyme leaves, sea salt, pepper and scatter basil on top.

- Cherry tomatoes, stems removed
- Peaches, peeled, pitted, and cut into chunks
- Fresh Mozzarella marinated cheese balls
- Fresh basil, chopped
- Blackberries, optional
- Balsamic Glaze
Instructions
- On a large platter, arrange the tomatoes and peaches. Next, lay down the cheese balls.
- Take some of the marinade from the mozzarella cheese and drizzle on top
- Sprinkle with fresh basil and berries
- Right before serving, drizzle with balsamic glaze
